INGREDIENTS
4 Eggs
Double volume (of eggs) warm water
TOPPINGS
Chopped chives
Soy sauce
Crispy chilli oil (optional)
HOW TO MAKE
Whisk the eggs in a bowl.
Add the warm water.
Pour the mixture through a sieve
Place the bowl of egg and water mixture in a saucepan of boiling water (keep the mixture in a bowl and place the bowl in the saucepan) or if you have, place it in a steamer.
Steam for 12 minutes with the lid on
Remove from the heat, slice into squares and add your toppings - enjoy!
