INGREDIENTS

  • 4 Eggs

  • Double volume (of eggs) warm water

TOPPINGS

  • Chopped chives

  • Soy sauce

  • Crispy chilli oil (optional)

HOW TO MAKE

  1. Whisk the eggs in a bowl.

  2. Add the warm water.

  3. Pour the mixture through a sieve

  4. Place the bowl of egg and water mixture in a saucepan of boiling water (keep the mixture in a bowl and place the bowl in the saucepan) or if you have, place it in a steamer.

  5. Steam for 12 minutes with the lid on

  6. Remove from the heat, slice into squares and add your toppings - enjoy!
